Use tongs to toss well to coat and set off to the side for a smidge. Heat 1 tablespoon olive oil in a large wok or chefs pan on medium-high heat until shimmering. Once hot (a small sprinkle of water should pop and hiss) add in all of the chicken and spread in an even layer. Cook undisturbed for 3 to 5 minutes.

Add the rice flour, tapioca flour and salt to a mixing bowl and stir to mix consistently. Add the warm water whisking well to integrate the flour and water together. Once well mixed add in the olive oil and whisk thoroughly again. Allow the flour batter to stand for about an hour, occasionally giving it a quick whisk.
Strain the water into a saucepan, squeezing all the liquid from the pulp. Add the palm sugar, caster sugar and seasoning sauce. Bring to the boil, then simmer until reduced and slightly syrupy H9Um.
